Childhood Carrot Raisin Salad Recipe

This is a classic side dish that reminds me of my childhood. I made this Carrot Raisin Salad when my kids were growing up and I made it where I worked. Everyone loves this side dish.

Grate some carrots and place them in a bowl. Add pineapple tidbits, raisins, sugar, and mayonnaise. Mix everything together and refrigerate a few hours before serving.

Let me GIVE YOU A TIP for the people who do not like mayonnaise. I learned from a chef to use whipped cream that you get in the frozen food section at your local grocery store (like Cook Whip) . It makes this salad so creamy and delicious.

  • Comes together in just a few minutes.
  • A light side dish ideal for potlucks, picnics, or even holiday meals! (LIKE EASTER)

I bet you, most likely, have all the ingredients at home already.

INGREDIENTS

  • Mayonnaise…we use Cool Whip instead.
  • Honey….or sugar it is up to you.
  • Shredded carrots….You’ll need about 4 cups of shredded carrots. I just use a box grater it goes pretty fast.
  • (To get 4 cups of shredded carrots, you will need to plan on having about 1 pound of whole carrotsfast. or about 5 to 6 large carrots.)
    Raisins….you could do Craisins or Golden Raisins if you like.

MAKE THOSE OLD RAISINS LIKE NEW AGAIN…..

Raisins can dry out as they get older. But all you have to do is cover them with boiling water and let them sit for around 5-10 minutes. Then drain and they should be like new.

Store your carrot raisin salad in an airtight container in the refrigerator for 4 – 5 days. The longer your salad sits the more flavorful it will become!

We usually have family over for a Easter Dinner. I hope you do too. We usually have a craft table so they have a little trinket to take home and remember our time together. Then it is on to the Easter Egg Hunt!

Ingredients
  

  • 4 cups shredded carrots
  • 3/4-1 1/2 cups cups raisins
  • 1/4 cup mayonnaise or Cool Whip
  • 2 tbsps sugar or honey ( if you use Cool Whip I could cut the sugar in half)
  • 2-3 tbsps 2% milk

Instructions
 

  • Mix the first 4 ingredients. Stir in enough milk to reach desired consistency. Refrigerate until serving.
