Quick Family Recipe….Boy Scout Stew

Yes when my boys were growing up they were active in boy scouts. It is a great program that teaches them some skills they will need their whole life. One of those skills is learning how to cook.

This Boy Scout Stew is a recipe that you can cook at home or when you are camping. Families love this quick hearty meal.

It is basically a vegetable soup with ground beef.  I have also heard it called Hamburger Stew and Hamburger Soup.

What a great way to use up veg that needs used in your fridge.  And don’t forget to make a fresh loaf of bread, or cornbread with butter. I hope this childhood memory will always be remembered.

INGREDIENTS….

  • Ground beef
  • Olive oil
  • Bush’s Baked Beans
  • Onion
  • Cumin
  • Chili powder
  • Kosher salt
  • Black pepper
  • Garlic powder
  • Cayenne pepper
  • Beef stock (Better Than Boullion)
  • Bush’s Steakhouse Grillin’ beans
  • Red potatoes
  • Diced tomatoes
  • Canned corn
  • Pinto beans

The baked beans add a delicious sweetness to the soup. Some people do not like baked beans. If you are one of those people just use an equal amount of chili beans.

If you have leftovers you can keep them in the refrigerator for up to 4 days or in your freezer for a couple of months.

Ingredients
  

  • 2 tbsps  olive oil
  • 1 pound  ground beef
  • 2 cups  onion, cut into large pieces
  • 1 pound  potatoes, peeled and cut into 1” pieces
  • 1 1 14.5–ounce can beef stock
  • 2 14.5–ounce cans diced tomatoes
  • 2 8.5 ounce cans Bush’s Baked Beans
  • 22.5 ounce can Bush’s Steakhouse Grillin’ beans
  • 1  15.5ounce can pinto beans, rinsed and drained
  • 1 14.5 ounce can kernel corn, drained
  • 1 tsp  ground cumin
  • 1 tsp  ground chili powder
  • 1 tsp kosher salt
  • 1/2 tsp  freshly ground black pepper
  • 1/2 tsp  garlic powder
  • 1/4 tsp  ground cayenne pepper

Instructions
 

  • Preheat oven to 375 degrees F.
  • In a medium Dutch oven, over medium heat, add olive oil and add the beef and onions.
  • Break up the beef and cook until browned.
  • Add all other ingredients and bring to a simmer, cover and place in the oven for 30 minutes or until potatoes are tender.
