“Utah Fry Scones with Whipped Honey Butter”

Scones have always been a farmhouse favorite and we made them every year around this time at the farm when the our family was growing up. Today I am sharing a recipe for “Utah Fry Scones” that are proof that the best recipes are often the simplest ones.
Utah Fry Scones trace their roots back to pioneer days, when settlers fried simple bread dough in hot oil as a quick, hearty treat. Over time, they became a state staple, showing up at family dinners, church gatherings, and county fairs.
They are a classic comfort food and making them is easy — all you need is yeast dough, and hot oil for frying. Once the dough puffs up and turns golden, drain it and serve warm with some Whipped Honey Butter.

When I was growing up there was a restaurant called Me & Stan’s In Rexburg Idaho. His restaurant is not there anymore but I will always remember how delicious his scones were and his Honey Butter was out of this world delicious. (DO NOT LOSE THIS RECIPE!!)
The BEST Honey Butter Recipe Rrom Me&Stan’s Restaurant….
- 1/2 lb Butter Room Temperature
- 1/2 lb Margarine Room Temperature
- 7 oz Marshmallow Creme
- 1/4 cup Water
- 1/4 cup Sugar
- 3/4 cup Honey
- Mix water and sugar in a small saucepan and bring to a boil. As soon as the sugar is dissolved, remove from heat. Set aside to cool.
- In a large bowl with a hand mixer, whip butter and margarine until they start to become a fluffy. Then add in the honey, marshmallow cream, and the simple syrup.
- Keep whipping it until it’s all mixed together well and has formed a creamy, whipped consistency.
- Refrigerate 1-2 hours or until ready to use.

Ingredients
- 1 cup warm water (about 110°F / 43°C)
- 2 1/4 tsps active dry yeast (1 packet)
- 2 tbsps sugar
- 2 tbsps melted butter
- 1/2 tsp salt
- 3 cups all-purpose flour (plus more for kneading)
- Vegetable oil for frying (about 2 inches deep)
Instructions
- In a large bowl, mix warm water, sugar, and yeast. Let stand for 5–10 minutes until foamy.
- Add oil, salt, and 2½ cups of flour. Stir until dough forms. Add remaining flour as needed until dough is soft and slightly sticky but not wet.
- On a lightly floured surface, knead 3–4 minutes until smooth.
- Place dough in a greased bowl, cover, and let rise in a warm spot for 45–60 minutes, or until doubled in size.
- Punch down dough, divide into 12 pieces, and stretch each into a 4–5 inch round (¼ inch thick).
- Heat oil in a deep pan to 350°F (175°C). Fry each scone 1–2 minutes per side, until golden brown and puffed.
- Place on paper towels to drain.
- Enjoy warm with honey butter.
