In a large bowl, mix warm water, sugar, and yeast. Let stand for 5–10 minutes until foamy.
Add oil, salt, and 2½ cups of flour. Stir until dough forms. Add remaining flour as needed until dough is soft and slightly sticky but not wet.
On a lightly floured surface, knead 3–4 minutes until smooth.
Place dough in a greased bowl, cover, and let rise in a warm spot for 45–60 minutes, or until doubled in size.
Punch down dough, divide into 12 pieces, and stretch each into a 4–5 inch round (¼ inch thick).
Heat oil in a deep pan to 350°F (175°C). Fry each scone 1–2 minutes per side, until golden brown and puffed.
Place on paper towels to drain.
