Ingredients
- 3 cups all-purpose flour
- 1/2 cup sugar
- 1 tbsp baking powder
- 1/2 tsp baking soda
- 1 tsp salt
- 1 tbsp orange zest
- 2 large eggs
- 3/4 cup fresh orange juice
- 3/4 cup buttermilk
- 1/2 cup melted unsalted butter
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk orange zest, eggs, orange juice, buttermilk, and melted butter until smooth.
- Pour the wet mixture into the dry ingredients and stir until just combined. The dough will be thick — that’s normal. Fold in cranberries gently.
- Form the dough into a round loaf and place it on your prepared pan. Lightly score an “X” on top — this helps it bake evenly and gives it that classic soda bread look.
