Ingredients
  

  • 3 cups all-purpose flour
  • 1/2 cup sugar
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 1 tbsp orange zest
  • 2 large eggs
  • 3/4 cup fresh orange juice
  • 3/4 cup buttermilk
  • 1/2 cup melted unsalted butter

Instructions
 

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  • In another bowl, whisk orange zest, eggs, orange juice, buttermilk, and melted butter until smooth.
  • Pour the wet mixture into the dry ingredients and stir until just combined. The dough will be thick — that’s normal. Fold in cranberries gently.
  • Form the dough into a round loaf and place it on your prepared pan. Lightly score an “X” on top — this helps it bake evenly and gives it that classic soda bread look.
  • Bake for 45–55 minutes, until golden brown and a toothpick inserted into the center comes out clean.
  • Let cool for at least 10–15 minutes before slicing.
  • Whisk powdered sugar with orange juice until smooth and drizzle over the cooled loaf.
