Ingredients

- 1/2 tsp salt
- 2 tbsps sugar
- 3 tbsps cubed, cold butter
- 1 cup buttermilk
- 1/2 cup raisins
- 1 egg ( for extra richness)
Instructions
- Preheat your oven to 375°F (190°C). Grease or line a 12-cup muffin tin.
- In a large bowl, whisk together flour, baking soda, salt, and sugar.
- Add the cold butter and mix with a pastry cutter or fork until the mixture resembles coarse crumbs.
- Stir in the buttermilk (and egg if using) until just combined. The batter should be thick but soft.
- Fold in raisins or currants if you want a slightly sweet muffin.
- Spoon the batter evenly into the muffin cups, filling each about ¾ full.
- Bake for 18–22 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
- Let them cool slightly before serving.
