Ingredients
  

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 tbsps sugar
  • 3 tbsps cubed, cold butter
  • 1 cup buttermilk
  • 1/2 cup raisins
  • 1 egg ( for extra richness)

Instructions
 

  • Preheat your oven to 375°F (190°C). Grease or line a 12-cup muffin tin.
  • In a large bowl, whisk together flour, baking soda, salt, and sugar.
  • Add the cold butter and mix with a pastry cutter or fork until the mixture resembles coarse crumbs.
  • Stir in the buttermilk (and egg if using) until just combined. The batter should be thick but soft.
  • Fold in raisins or currants if you want a slightly sweet muffin.
  • Spoon the batter evenly into the muffin cups, filling each about ¾ full.
  • Bake for 18–22 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
  • Let them cool slightly before serving.
