Instructions
Preheat your oven to 375°F (190°C). Grease or line a 12-cup muffin tin.
In a large bowl, whisk together flour, baking soda, salt, and sugar.
Add the cold butter and mix with a pastry cutter or fork until the mixture resembles coarse crumbs.
Stir in the buttermilk (and egg if using) until just combined. The batter should be thick but soft.
Fold in raisins or currants if you want a slightly sweet muffin.
Spoon the batter evenly into the muffin cups, filling each about ¾ full.
Bake for 18–22 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
Let them cool slightly before serving.
