Ingredients
  

  • 4 cups shredded carrots (about 6–8 medium carrots)
  • 1 cup raisins
  • 1/2 cup mayonnaise ir Cool Whip
  • 1-2 tbsps honey or sugar
  • 1 tbsp lemon juice
  • Optional: ¼ cup crushed pineapple or diced apples
  • Optional: pinch of salt

Instructions
 

  • Peel fresh carrots and shred them finely. You want a texture that’s tender but still has a bit of crunch.
  • If your raisins feel a little dry, soak them in warm water for about 5–10 minutes. This brings them back to life—plump, juicy, and full of sweetness.
  • In a large mixing bowl, stir together the mayonnaise or whipping cream, honey (or sugar), lemon juice, and a pinch of salt. Taste as you go—you’re looking for that perfect balance of sweet and tangy.
  • Add the carrots and raisins to the bowl. Mix until everything is evenly coated and creamy.
  • Cover and refrigerate for at least 30 minutes. This step is key—the flavors meld, the carrots soften slightly, and everything becomes even more delicious.
