INGREDIENTS FOR SAUCE

Salt and pepper to taste
Instructions
Heat butter or oil in a skillet over medium heat. Add the sliced onions and cook for 8–10 minutes until soft and caramelized.
Add the shredded corned beef to the skillet and warm it for a few minutes until heated through.
In a small bowl, mix sour cream, horseradish, Dijon mustard, salt, and pepper until smooth.
Heat the tortillas in a dry skillet or microwave for about 20–30 seconds until soft and flexible.
Spread a spoonful of mashed potatoes on each tortilla. Top with warm corned beef, shredded cabbage, caramelized onions, and cheddar cheese.
Drizzle the horseradish cream sauce over the tacos.
