Ingredients
  

  • 2 cups shredded corned beef
  • 2 cups mashed potatoes
  • 8 small flour tortillas
  • 1 cup shredded green cabbage
  • 1 cup shredded cheddar cheese
  • 1 small thinly sliced onion
  • 1 tbsp butter or oil

INGREDIENTS FOR SAUCE

  • 1/2 cup sour cream
  • 1 tbsp horseradish
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Instructions
 

  • Heat butter or oil in a skillet over medium heat. Add the sliced onions and cook for 8–10 minutes until soft and caramelized.
  • Add the shredded corned beef to the skillet and warm it for a few minutes until heated through.
  • In a small bowl, mix sour cream, horseradish, Dijon mustard, salt, and pepper until smooth.
  • Heat the tortillas in a dry skillet or microwave for about 20–30 seconds until soft and flexible.
  • Spread a spoonful of mashed potatoes on each tortilla. Top with warm corned beef, shredded cabbage, caramelized onions, and cheddar cheese.
  • Drizzle the horseradish cream sauce over the tacos.
