In a large bowl, stir warm water, sugar, and yeast.
Let sit 5–10 minutes until foamy.
Add olive oil and salt.
Stir in flour until a dough forms.
Knead 5–7 minutes until smooth.
Cover and let rise 45–60 minutes until doubled.
Preheat oven to 425°F.
Pour a generous drizzle of olive oil onto a rimmed sheet pan (9x13 for thick crust, standard sheet pan for thinner).
Press dough into the pan. If it shrinks back, let it rest 10 minutes and try again.
Spread sauce evenly.
Sprinkle mozzarella cheese and add toppings of your choice. Sprinkle more cheese on top.
Bake 18–22 minutes until the cheese is bubbly and slightly golden, and the edges are crisp.
Let it sit 5 minutes before slicing then slice into squares and ENJOY!!
