  • 3 large eggs

  • 1/2 tsp salt
  • 4 tbsps butter

Instructions
 

  • Preheat the oven to 425°F and place a 10-inch cast iron skillet in the oven while it heats.
  • Blend the batter by combining eggs, milk, flour, sugar, and salt until smooth.
  • Melt the butter in the hot skillet, swirling to coat the bottom and sides.
  • Pour in the batter and return the skillet to the oven.
  • Bake for 18–22 minutes, until puffed, golden, and dramatic.
  • Serve immediately.
