Ingredients
  

  • 3-4 thinly sliced large russet potatoes
  • 2 tbsps olive oil
  • 1 tsp salt
  • 1/2 tsp garlic powder
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup cooked, and crumbled bacon (or Corn Beef)
  • 1/4 cup sliced green onions
  • Sour cream (for topping)

Instructions
 

  • Preheat oven to 400°F. Slice potatoes into thin rounds (about ¼ inch thick).
    Toss with olive oil, salt, and garlic powder.
  • Spread potato slices in a single layer on a lined baking sheet.Bake for 20–25 minutes, flipping halfway through, until golden and crispy.
  • Layer baked potatoes on an oven-safe platter or skillet.Sprinkle with shredded cheese and bacon.
    Return to oven for 5–7 minutes until cheese is melted and bubbly.
  • Remove from oven and add:
    Green onions
    A drizzle of sour cream
    Optional toppings
    Serve immediately and watch them disappear! 🍀
