No Bake Strawberry Cheesecake For Two

Hi everyone! I am Barbara from The Recipe Stop sharing a DELICIOUS  No Bake Strawberry Cheesecake recipe that is a perfect no-bake dessert for spring or summer. I know you will love it as much as we do.

Now that are kids are grown at least once a week I love to make something delicious for just my husband and me. This No Bake Strawberry Cheesecake does just that.

You can assemble in whatever container you like.You can use short drinking glasses, or parfait glasses just on a plate.

No bake cheesecakes are easy to put together and require no baking and a simple dessert to share anytime.

INGREDIENTS….

  • Honey Graham Crackers.
  • Unsalted Butter. 
  • Fresh Strawberries…..Fresh is best for this recipe, but frozen (thawed) can be used as a substitute.
  • Granulated Sugar
  • Heavy Whipping Cream
  • Full-Fat Cream Cheese
  • Lemon Juice
  • Powdered Sugar

Be sure cream cheese is at room temperature to avoid a lumpy filling. Pull it out of the fridge 1-2 hours before you need it

This no bake Strawberry Cheesecake can be stored in the refrigerator for 3-4 days, but is best if eaten within 2-3 days as the crust will get softer the longer it sits.

Ingredients
  

  • 1/2 lbs.  fresh strawberries
  • 2 tbsp  granulated sugar
  • 4 oz. cream cheese, at room temperature
  • 1 tbsp  lemon juice
  • 1 cup heavy whipping cream
  • 1/2 cup  powdered sugar
  • 1/2 tsp vanilla extract
  • 2 graham crackers
  • 1 tbsp  butter
  • 1/2 tbsp brown sugar 

Instructions
 

  • In a bowl, combine the sliced strawberries and granulated sugar.
  • In a separate bowl, begin whipping the heavy whipping cream on high speed with a hand mixer.
    When it becomes thick and fluffy, but is not yet forming peaks, add in the vanilla extract and powdered sugar. Continue to whip until the whipped cream forms stiff peaks.
  • In a separate bowl, combine the cream cheese and lemon juice. Whip the cream cheese and lemon juice together until soft and creamy.
  • Add the whipped cream to the bowl of whipped cream cheese, then whip the two together until evenly combined.
  • Place the graham crackers in a zip-top bag, and use a heavy object to crush the crackers until they are in fine crumbs.
    In a small bowl, combine the graham cracker crumbs, melted butter, and brown sugar, stirring until combined.
  • To assemble the no bake cheesecakes, divide the graham cracker crumbs between two glasses.
    Next add the cheesecake filling, then top with the juiced strawberries making sure to add a couple spoonfuls of the strawberry juice with the berries.
  • Serve immediately or refrigerate until ready to eat!
