Ingredients
  

CUSTARD BASE

  • 1 cup pineapple juice
  • 1/2 cup sugar
  • 1 egg
  • 1 tbsp flour
  • 1 tsp lemon juice

SALAD

  • 1 cup acini di pepe pasta
  • 1 can drained mandarin oranges
  • 1 can drained pineapple tidbits
  • 1 cup mini marshmallows
  • 1 cup whipped topping
  • 1/2 cup Optional toppings: chopped nuts, shredded coconut, sprinkles, sea salt
  • Maraschino cherries for garnish (optional)

Instructions
 

  • Bring a pot of water to a boil and cook the acini di pepe pasta according to package directions. Drain and rinse with cold water.
  • In a saucepan, whisk together pineapple juice, sugar, egg, flour, and lemon juice. Cook over medium heat, stirring constantly, until thickened.
    Remove from heat and allow the mixture to cool completely.
  • In a large bowl, mix the cooled pasta with the custard mixture.
    Fold in mandarin oranges, pineapple, marshmallows, coconut, and whipped topping.
  • Cover and refrigerate for at least 2 hours before serving.
  • Top with maraschino cherries if desired
