Mini Quiche Recipe For Mother’s Day

Today I am sharing a recipe for MINI QUICHE! This recipe is perfect for a Mother’s Day breakfast in bed. They are so flavorful with all the savory fillings.
A quiche is a pastry shell or crust that is filled with eggs and other ingredients, baked together and it is so easy to make.
This recipe is so delicious and includes some healthy ingredients. What a perfect way to start your day.
Try adding some roasted potatoes, oatmeal, or miniature cinnamon rolls as a side dish. Mom will love this on Mother’s Day!
Mini Quiche Recipe Ingredients
- Large eggs
- Heavy cream
- Cooked ham
- Cheddar cheese
- Green onions
- Parsley
- Salt and black pepper
- Refrigerated pie crust or make your own recipe.
For a bite-sized mini quiche, use a 24-count mini muffin tin and cut the crusts to about a 2″ diameter. If you’re using a 12-count muffin tin, cut the crusts into 3.5″ rounds. ( I use different biscuit cutters that works great)
Let me share another little tip with you……after you get everything mixed up in a bowl use a measuring cup with a spout to pour into each individual muffin cup. Less mess this way.

Grab your apron and head into your kitchen and lets get cooking.

Ingredients
- 7 large eggs
- 1 1/2 cups heavy cream
- 1 1/2 cups chopped ham
- 1 1/4 cups shredded medium cheddar cheese
- 1/2 cup green onions
- 3 tbsps fresh parsley
- salt and black pepper
- 2 refrigerated pie crusts
Instructions
- Preheat oven to 375 degress. Spray a mini muffin tin or regular muffin tin with nonstick cooking spray, set aside.
- In a large mixing bowl whisk together eggs and cream until well blended.Stir in ham, cheddar cheese, green onions, parsley and season with salt and pepper to taste (I use about 1 tsp of each).
- Scoop egg mixture into crusts filling nearly full.Bake in preheated oven until eggs are just set in center, about 23 to 26 minutes. (Note using a regular muffin tin these egg quiches could take longer to cook.)Serve Warm.
