Don't Forget The Ice Cream!

My rhubarb is up in my garden and I am so excited to make Rhubarb Strawberry Crisp, Rhubarb Strawberry Pie, Rhubarb Strawberry Muffins, and more. Oh my goodness if you have not tried this recipe you are going to love it.
I have a huge plant in my garden enough to make many delicious recipes and put some in the freezer.
WHAT IS RHUBARB??
Rhubarb is a vegetable that grows straight from the ground. It consists of long pink stalks with large leafy greens at the end. Each stalk is cut at the very end, where the plant meets the ground. Then, the leaves are chopped off to be left with just the pink stalks (the edible portion).
What is the difference between a Crumble, Crisp, and Cobbler?
Crumble – a crumble is a baked fruit dessert with a layer of streusel topping, consisting of flour, sugar and butter.
Crisp – similar to a crumble, but here the streusel topping includes oats, which crisps up as it bakes.
Cobbler – a cobbler is a baked fruit dessert with a thick biscuit topping, dropped onto the fruit in small rounds, making it look like a cobbled road.

Ingredients
  

  • 3 cups  rhubarb fresh or frozen, sliced 1/2-inch pieces
  • 2 cups strawberries chopped
  • 1/3 cup cane sugar
  • 1/2 tsp cinnamon

STEUSEL TOPPING

  • 3/4 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup packed dark brown sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 4 tbsp cold  butter
  • Vanilla ice cream optional

Instructions
 

  • Preheat oven to 375°F. Grease a 7-inch x 11-inch baking dish.
  • Place the rhubarb and strawberries into the greased baking dish; sprinkle sugar and cinnamon on top and set aside.
  • Combine the flour, oats, brown sugar, baking powder and salt in bowl. Cut in butter using a fork until mixture resembles coarse crumbs. Sprinkle the streusel mixture over rhubarb mixture.
  • Bake until the crisp topping is lightly brown and filling is bubbly, about 35-40 minutes. Serve warm with a scoop of ice cream.
