Ingredients
  

  • 16 ounces frozen strawberries...thaw the strawberries, remove excess water.
  • water
  • 1 cup sugar
  • chilled Seltzer
  • 2 tbsp lemon juice
  • 1/4 tsp vanilla extract

Instructions
 

  • With a slotted spoon, scoop thawed strawberries into a medium pot and mash with a potato masher or fork.
    Pour reserved juices from thawed strawberries into a measuring cup. Add enough water on top of strawberry juice to equal 1 ½ cups of total liquid.
    Add liquid to pot with strawberries and bring to a boil, stir occasionally. Reduce heat to low and simmer for 15 minutes.
  • Remove from heat and strain syrup through a fine mesh sieve into a bowl. Press down on strawberries with a wooden spoon to extract as much liquid as possible.
    Discard pulp. Return juice to pot, stir in sugar until dissolved, and bring to a boil again.
    Reduce heat to low and simmer for 5 minutes, stirring occasionally and skimming off any foam that may appear.
  • Remove syrup from heat and allow to cool to room temperature. Syrup will continue to thicken as it cools.
    Store, covered, in the refrigerator.
  •  To serve, mix about 2 tablespoons of strawberry sugar syrup with about 8 fl. oz club soda (or lime/lemon flavored sparkling water).
    Serve cold or at room temperature.
