Favorite Childhood Recipe….7 Up Jello Salad

This recipe brings me back to my childhood. This was a favorite recipe growing up as kids. Who does not like jello? This dessert is easy and delicious. It’s the forgotten 7 Up Jello Salad of the 1950’s.

Gelatin has been around since Egyptian times. It was a long process and only the wealthy could afford it. Then in the 1800’s a dried version became available. Pre-granulated gelatin was created in 1894 and soon after a popular brand of it was born.

Lime flavored gelatin was introduced in 1930. It was an instant hit and resulted in lots of recipes being developed.

This recipe is SO EASY to put together, it just takes a couple of easy ingredients. Just be aware, this is a chilled dessert that will need to hang out in your refrigerator for a couple hours, so you don’t want to be making this at the last minute!

INSTRUCTIONS…..

  • Large package of Lime Jello
  • Egg
  • Bananas
  • Sugar
  • Minature Marshmallows
  • 7 UP…it needs to be cold.
  • Canned Crushed Pineapple Don’t drain it!
  • Dream Whip
  • Milk
  • Pecans

Store any leftovers cover the dish tightly with plastic wrap and place it in the fridge. It will last for up to 7 days.

Jello is a year round side dish and a refreshing treat on the go whenever you need it.

Ingredients
  

  • 1 large box of lime Jell-O (6 ounces)
  • 2 cups boiling water
  • 2 cups cold 7 Up soda
  • 3-4 sliced bananas
  • 1 can crushed pineapple, drained (save the juice for the topping)
  • 2 cups miniature marshmallows
  • 1/2 cup chopped pecans

TOPPING

  • 1 egg
  • 2 tbsps flour
  • 1 cup pineapple juice (from the can of crushed pineapple)
  • 1/2 cup sugar
  • 1 tbsps butter
  • 1 pkg Dream Whip
  • 1/2 cup milk (for the Dream Whip)

Instructions
 

MAKE THE LIME JELLO LAYER

  • Whisk together the lime gelatin powder and boiling water until the gelatin is completely dissolved. Add two cups of cold 7-Up soda. Allow this mixture to cool to room temperature.
  • Drain the juice from the canned pineapple. Reserve one cup of the juice to make the topping.
  • Add the bananas, pineapple, marshmallows, and pecans to the lime jello mixture and stir to distribute evenly.
  • Spread the jello mixture in a casserole dish and place in the fridge to set (about 2-3 hours).

HOW TO MAKE THE TOPPING

  • In a medium mixing bowl beat the egg. Add the flour and mix well. Mix in the pineapple juice, sugar, and butter.
    Transfer this mixture to a saucepan and cook over medium heat, and stir until thick.
    Remove from stove and allow to cool.
  • Prepare the Dream Whip according to box directions.
  • When the egg mixture is cool, add the Dream Whip and mix until combined.
  • Spread the Dream Whip topping evenly on top of the lime Jell-O layer.
  • Refrigerate dessert until ready to serve. ENJOY!!
