Easy Pizza Muffins For Busy Moms

Easy Pizza Muffins For Busy Moms

Between school, homework, activities, and the million little things that seem to fill up our days, I’m always happy to have an easy dinner or snack that everyone will actually eat. These Easy Pizza Muffins check all the boxes for busy moms: they’re quick, cheesy, kid-approved, and so much fun to make together.

Some of our favorite family recipes are the ones that are simple, comforting, and bring everyone into the kitchen. I love watching everyone choose their favorite toppings and make their own little pizza creations.

Pizza Muffins are a quick, freezer-friendly, and portable school lunch idea that tastes just like handheld mini pizzas.

Made with simple ingredients and baked until golden and bubbly, pizza muffins have all the flavors we love about pizza in a cute, grab-and-go package.

Why We Love These Pizza Muffins

There’s something especially fun about making individual pizzas. Everyone can add their favorite toppings, which means picky eaters and adventurous eaters can happily make their own.

They’re also a great way to use up small amounts of leftover vegetables, cooked meat, or cheese hiding in the refrigerator.

Let the Kids Get Creative

One of the reasons I keep coming back to this recipe is that it’s so easy to change.

Cheesy pizza muffins — just sauce and lots of cheese.

Veggie pizza muffins — peppers, mushrooms, olives, and whatever vegetables we have on hand.

Hawaiian pizza muffins — ham and pineapple for the sweet-and-savory fans.

You really can’t go wrong.

Ingredients

  • refrigerated biscuit dough or pizza dough
  • pizza sauce
  • shredded mozzarella cheese
  • mini pepperoni
  • diced bell pepper
  • black olives, optional
  • Italian seasoning
  • Parmesan cheese
  • Cooking spray

You can even set out bowls of toppings and let everyone create their own combination. It turns dinner into a little family activity—and usually makes trying new ingredients a lot more fun.

A Few Helpful Tips

Don’t overfill the muffin cups, since the cheese and sauce can bubble over while baking. For easier cleanup, make sure the muffin tin is well greased.

If you’re making these ahead, let them cool completely and store them in the refrigerator. They can be reheated in the oven or microwave for a quick snack or lunch.

The Perfect Family Dinner

Pizza night doesn’t always have to mean ordering a delivery. These pizza muffins are simple enough for a weeknight but fun enough for a family movie night or kids’ party.

They’re warm, cheesy, customizable, and—most importantly—everyone gets a little pizza of their own. That’s a dinner we can all agree on!

Ingredients

  • 1 tube refrigerated biscuit dough or pizza dough
  • 1/2 cup 1/2 cup pizza sauce
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup mini pepperoni
  • 1/4 cup diced bell pepper
  • 1/4 cup sliced olives, optional
  • 1 tsp Italian seasoning
  • 2 tbsps grated Parmesan
  • Cooking spray

Instructions

  • Start by preheating your oven to 375°F and lightly spraying a 12-cup muffin tin.
  • Separate the dough into 12 pieces and gently press each piece into a muffin cup. You want the dough to come up the sides a little so it makes a tiny pizza "cup."
  • Add a spoonful of pizza sauce to each one, then let the kids help with the toppings. This is usually my favorite part because they get so excited choosing what goes into their pizza muffins.
  • Top each one with plenty of mozzarella, pepperoni, and whatever other toppings your family loves. Sprinkle a little Italian seasoning and Parmesan over the top.
  • Bake for about 15–18 minutes, until the crust is golden and the cheese is melted and bubbly.
  • Let them cool for a few minutes before taking them out of the pan. Then serve them with a little extra pizza sauce for dipping.
